Joey’s culinary journey began in his teenage years, igniting a lifelong passion for exceptional dining experiences. He honed his skills in the prestigious environment of Roy Yamaguchi’s “Roy’s Restaurant,” where he trained in the refined art of Hawaiian seafood cuisine.
In 2016, Joey’s pursuit of culinary excellence led him to Orange County, where he immersed himself in the intricate worlds of omakase and kaiseki. His dedication to these traditional Japanese dining styles allowed him to explore and perfect the art of seasonal and meticulously crafted dishes.
In 2018, Joey took a significant step by teaming up with Jackson and Kai to offer personalized catering services, channeling his love for Japanese cuisine into a unique and bespoke culinary experience.
As of 2023, Joey has expanded his horizons to Las Vegas, Nevada, where he has launched the latest branch of M.Sushi Catering. Here, he continues to share his passion for sushi with the community, driven by a commitment to providing exceptional and memorable dining experiences.

To ensure a seamless event experience, here are a few items you may need to prepare based on the style of service you choose:
– For buffet-style service, please have plates and napkins available for your guests. If there is counter space for our chefs to work and display, that would be ideal.
– For open-space events, kindly provide tables and linens for us to set up stations.
– For omakase events, prepare a dinner setup for your guests. Additionally, ensure there is either a counter space available for our chefs to work on or allow us to set up a workstation close to where guests are seated.

*All cancelations will be dealt with on a case by case basis. Typically the client will lose their deposit, but depending on how close the cancellation is to the time of the event, the deposit may be used towards rescheduling a new event.

Yes, we do have an overtime fee in place. Our sushi chefs are scheduled based on the agreed-upon timing for your event. This fee helps us take care of our chefs’ schedules and provide the best possible service for your event.
